How nice is it to see some sunshine at last?!

I love how those first warming rays instantly banish the lingering winter blues, bringing back memories of barbecues and water fights and – perhaps most importantly for those of us desperately trying to adult… cocktails!

I keep rabbiting on about our home renovation, but we lived for a looooong time in a cramped home that wasn’t very user-friendly. I literally can’t wait until the work is done this summer – I can already envisage throwing open our fancy new sliding door, and mixing a cheeky drink in our new open-plan kitchen.

What will you make? I hear you cry.

Well, I’d start with crushed ice and a double shot of shimmery Mermaid Tears vodka, from my favourite online drinks retailer, 31 DOVER.COM. Next, I’d add a big, splashy dollop of fresh lime juice, dropping in the squeezed peel to get those lovely citrus oils, before topping with spicy ginger beer.

Maybe I’d even add some cloudy apple juice too – that counts as one of your five-a-day, right?!
