Necessity is the mother of invention and, as it turns out, it’s a pretty good catalyst for creating new recipes too! We’re lucky to have an AMAZING butcher just up the road from us who makes us delicious turkey sausages, as we try not to eat too much red meat.
When I visited the other day he hadn’t had a chance to make the sausages yet, so I grabbed some of the seasoned minced meat, and got to thinking… At home I rolled the meat into balls and quickly browned them in a frypan with a little olive oil. I raided the veggie drawer, and roughly chopped some red pepper, red onion, and courgette.
In went the turkey meatballs, followed by a generous sprinkle of sea salt and cracked black pepper, then the dish went into the oven for 20 minutes at 180 degrees. And… TA DAH! Turkey meatballs, with roasted Italian vegetables.
Quick, easy, tasty and healthy… what more could you ask from a family dish?
