SLAMMIN’ SALMON (easy family recipe)


I love salmon. Baked, poached, smoked, or raw atop of sushi. I even love it *whispers* from a tin. There – I said it. And you know what? I don’t care who hears it. Tinned salmon tastes good.
To prove it to all you lot, the team behind Princes Wild Alaskan Salmon set me a little fishy challenge – come up with a scrummy recipe, using tinned salmon. So I did.
Here are the ingredients for my very own Salmon, Corn, and Red Pepper fritters…
1 x tin of Princes Wild Alaskan Salmon
1/2 Red Pepper 
1/2 Red Onion
Handful of frozen sweetcorn
1 x egg (beaten)
1 x tbsp melted unsalted butter
sprinkle of salt
1/2 cup fresh breadcrumbs
And here’s how I made them…

mix all the ingredients together.
shape them into patties, and shallow fry them in olive oil. turn them gently, so they don’t fall apart! 

plate up your fritters. serve on lettuce, with a selection of sauces:
horseradish, soy sauce, and lemon juice.
